Easy and Fast Homemade Granola

As we promised in our previous article, we are sharing our super simple and fast granola recipe. To start with I should say that granola is usually baked which means that you should have an oven, but if you don’t own one don’t get sad because you still can make your own healthy homemade granola. Look at it simply and with a little creativity and use our pan fried recipe. If you want you can make it on the stove at home, in a tiny caravan or even on the bonfire!

Our nutty granola recipe

The ingredients listed are for around one kilogram of amazing granola:

  • 600 gr. rolled oats
  • 160 gr. walnuts
  • 160 gr. almonds
  • 80 gr. pepitas (shell-less pumpkin seeds)
  • 80 ml. coconut oil
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of vanilla powder
  • 40 ml. of maple syrup (agave syrup or honey works perfectly too)

IMPORTANT. First check up if you have a big enough pan, if not just use half of the ingredient amounts!

Try to use good quality ingredients, and if you prefer other nuts feel free to use them! I know that sweet flavour is tasty, but nuts will give their own sweetness and we want to keep it healthy so be aware of adding too many extra sugars. Oh, and if you can’t find pepitas then use sunflower seeds instead.

Step one: Over a low fire melt the coconut oil and then add rolled oats, nuts and pepitas. Mix everything then add cinnamon and vanilla and fry it over a medium fire for around 10 minutes, being sure to stire and keep it moving all the time, until you can see that the oats and nuts are toasted.

Step two: When the rolled oats look golden, add the maple syrup and mix it well. Fry it for a couple of minutes more, but be careful not to toast too much!

Step three: Let your fresh made granola cool down, the easiest way is to spread it out on the surface or a bit plate. If you would like to have it stuck in pieces then press them together with a spoon. After it is cold you can store it in a jar.

Step four: There is no step four, it is time to serve and enjoy!

This is the basic recipe of granola we make but you can mix it up with your own additions. Sometime we just add milk and enjoy it as it comes, sometimes we add fresh fruits or other ingredients according to our mood.
